Utah Heritage Jello of the Moment #2

A year ago when I was preparing to leave Portland and come to Utah my friends thought it would be a perfect opportunity to open up a jello restaurant. I already had the 1970's era Jell-O cookbook and the perfect customer base seemed to be waiting and ready for an all-Jello joint.

So even though that is a really stupid and condescending idea, my eyes were opened this past Pioneer's Day. Simy is in charge of ward activities and we decided to celebrate Utah Heritage with a chili dog and Jell-O potluck dinner. We had a couple dozen different jellos and the creativity of the medium was inspiring (not to mention it tastes good and is fun). This lead to the realization that dew needs to have Jell-O, both as a tribute to local culinary traditions and because it allows me to use up that can of tuna and imitation crab I have sitting around (maybe not).

Jello of the Moment is a limited supply series. #2 only has 8 servings available. #1 was the ward dinner inspired strawberry jello with fresh strawberries topped with a layer of chocolate pudding and then whipped cream. Sorry I made this for opening day and didn't take a picture.

#2 is a Five Layer jello featuring from bottom to top: Lime, Red Raspberry, Orange, Black Cherry and Strawberry.
